I've missed you guys. I want to apologize for my VERY VERY VERY long absence. I was a jerk, I neglected and abandoned you. Work got busy, life got busy, and unfortunately I stopped talking to you all. But! That is all about to change. This winter was rough, I am not gonna lie. The snow, work, the snow. Did I mention that we had A LOT of snow? Anyway spring time is here (fingers crossed) and I hope (fingers crossed) that I wont see snow again until next fall when I will be excited for it yet again.
I'm not usually a big fan of spring, in fact I am more of a summer, fall, winter girl. But I am actually really excited for it this time. There are big and scary changes in front of me. I am leaving my job in June and am going to try to do something totally new and different. The control freak side of me is having a nervous breakdown but my inner wild child is loving the idea of something new. Do I know what I will be doing in 2 months? Nope! But I am doing my best to roll with it and be proactive in figuring out my plan. (see Mom and Dad I am working to figure out a plan!)
But anyway back to the food, which is why you all come to this blog isn't it? I have already shared a bunch of my favorite breakfast dishes with you already (pancakes, overnight oats etc.), but I am also a huge fan of a post run smoothie in the morning. I think its nice to have something cold and refreshing when you get back, it also helps to cool me down before I get in the shower. There is almost nothing worse then getting in the shower while too hot, and then getting out and realizing that you're still sweating.
I started making this blueberry kale smoothie in the mornings and I love the boost of energy it gives me. As you all can tell from this blog I have some trouble making sure I get enough veggies into my diet, and smoothies have become a great way for me to trick myself.
So power up for your day with this delicious smoothie, you wont regret it and I promise you wont even know the kale is there!

Blueberry Kale Smoothie
- 1 cup kale
- 1/2 a banana
- 1/2 cup frozen blueberries
- 1/3 cup non-fat greek yogurt
- 2 tablespoons chia seeds
- 1 cup - 1 1/2 cups (depending on how liquidy you like your smoothies) OJ or Almond Milk
Place all of the ingredients in the blender together, blend till smooth.
** When I want my smoothie to have more acidity or zip to help wake me up in the morning I use OJ, when I want it to have a more creamy indulgent feel I go for the almond milk.
